    丁香小鱼干是福州人餐桌上的美味佳肴,它味道甜嫩、咸淡适中、肉质鲜美,是很下饭的常备菜品。

    Step 1

    把鱼破肚子取肠鳃洗净,不必去鳞,破两边,涂盐和香料腌制30分钟备用。Gut and clean the fish leaving them whole but keep the scales, cut the fish halfway through the fish to the central bone, marinate with salt and spices for 30 minutes for later use.

    Step 2

    开大火滚油爆香料,把鱼抹干水分后投入油锅内炸金黄色,捞起沥干油备用。Heat up the oil in a wok to saute the spices until fragrant. Wipe the fish dry, put it in the wok and fry until golden brown, remove and drain the oil for later use.

    Step 3

    把鱼回锅再炸第二遍让鱼干吃起来更酥脆。Return the fish to the wok and fry for a second time to make the dried fish crispier.

    Step 4

    把沥干油分的鱼干摆盘,撒上洋葱丝、小辣椒和小茴香即可享用,也可以沾辣椒酱同吃。Arrange the fish on a plate, sprinkle with shredded onion, chili pepper and cumin, or dip it in chili sauce and enjoy.
