    Step 1

    把鸡腿肉切大块,然后以腌料腌15分钟。Cut chicken into big chunks and season with marinade for at least 15 minutes.

    Step 2

    把鸡肉沾生粉然后炸熟,滴干油;用同一锅热油把三色灯笼椒、九层塔和辣椒干爆香后盛出,沥油。Just before deep-frying,coat chicken in tapioca flour then deep-fry briefly. Remove and drain well. Blanch all capsicums,basil leaves and dried chillies using the remaining hot oil. Remove and put aside.

    另外用干净的锅热麻油,把姜,葱头及蒜头炒香,然后加入鸡肉,松菇,灯笼椒及酱汁材料,煮滚后勾芡,盛出后加入九层塔和辣椒干,再撒上炸腰豆即可。In another clean saucepan,heat sesame oil and saute ginger,shallot,garlic and spring onion until fragrant. Add in chicken,shimeji mushrooms,capsicums and sauce. Add thickening to the gravy. Dish out and add basil leaves,dried chillies and chillies. Sprinkle in cashew nuts to garnish.
