鲜鱼是新年饭桌上不可少的食材,这道意头满满的兴旺鱼卷必须热吃,冷了鱼肉就不美味了。

鱼肉切厚片,中间切开口成蝴蝶状,以腌料腌妥。Slice fsh fllet in thick pieces.Slice in between and open it up to form the shape of a butterfly. Seasoning with marinade.
虾肉以纸巾抹干,稍微剁碎,并以少许盐和生粉腌制。Pat dry prawns with paper towel and mash lightly with a chopper. Sprinkle some salt and corn flour onto the prawns (for a starchy effect).
把虾胶塞入鱼肉开口里,再加入少许金针菇,卷起。Place the prawn paste in the center of the sliced open fsh fllet and add some enoki mushrooms over. Roll it up.
鱼皮切成瘦条状,用它捆绑鱼肉卷,然后排放在碟子里。Thinly slice fsh skin into strips. Use each strip to secure each fsh roll. Place the prepared pieces of fsh on a plate.
撒入少许麻油和食油。Sprinkle some sesame oil and cooking wine over again.
放入蒸炉蒸3分钟,取出,保温。Place the plate on a steamer and steam for 3 minutes. After 3 minutes remove plate from steamer and keep warm.
起锅热油,加入鸡高汤、盐、糖、胡椒粉及麻油,然后加入红萝卜粒,煮至滚后以生粉水勾芡。Heat a wok,add chicken stock,salt,sugar and pepper and a dash of sesame oil then add in the diced carrots.Bring to a boil. Add corn flour thickening and stir well.
最后倒入蛋白,搅拌均匀后倒在鱼卷上即可。Lastly add the egg white and stir to mix. Remove sauce from the heat and pour over the fsh rolls. Serve immediately.
