    合式餐饮方式在我们的日常生活中,是非常普遍的,只要是食材、调味料以及料理方式都对上了,便可制作出令人垂涎的菜式。就如米浆三子之一的“猪肠粉”,它是我们都非常熟悉的食物,这外型有如河粉被卷起般的米浆粉皮,其实,它更加爽嫩滑的口感,和其他食材蘸酱搭配在一起,轻易地就能激发各种不一样的风味,从北部的虾酱到南部的甜酱,港式混酱、酿料咖喱汁、安顺特色等,我还吃过菜脯蛋煎猪肠粉和爆炒猪肠粉呢! 如此百搭的它,这回不拎它来做个复合式料理,实在太对不住我的好奇心。只是,我还是不够疯狂的,这道咖喱蕃茄肉酱焗猪肠粉的口味,只能用家常来形容,热呼呼的一出炉,没两下子,就被扒光了。

    Step 1

    2汤匙冷油下锅,调中大火,先炒蕃茄丁,再下剩余的蔬菜丁,翻炒均匀后,盖上盖子,焖10分钟。Heat 2 tbsp oil in a wok, turn to medium-high heat then fry the diced tomatoes first, follow with the remaining diced vegetables (Pic 1). After frying evenly, cover with lid and simmer for 10 minutes.

    Step 2

    打开锅盖,下五花猪肉末,翻炒至断生。Open the lid, add minced pork belly and stir fry.

    Step 3

    下高汤和所有调味料,拌匀后,转小火焖25分钟后,即可熄火,备用。Add the broth and all seasonings to mix well, turn to low heat and simmer for 25 minutes, turn off the heat and set aside.

    Step 4

    1汤匙冷油下锅,将所有猪肠粉煎至金黄,上碟,切半,备用。Heat 1 tbsp oil in a pan, fry all the chee cheong fun until golden brown, put on a plate, cut in half and set aside.

    Step 5

    将一半份量的蕃茄肉酱舀入耐热皿具内,接着摆上一层猪肠粉,一层芝士片。Spoon half of the tomato meat sauce into a heat-resistant dish, then place a layer of chee cheong fun and a layer of cheese slices.

    Step 6

    接着再铺上一层猪肠粉,然后再加入剩余的蕃茄肉酱,撒上综合芝士碎。Then add another layer of chee cheong fun, then add the remaining tomato meat sauce, sprinkle with mixed cheese.

    Step 7

    放入预热200℃的烤箱内,烤约12分钟,即可取出,趁热享用。Put it in a preheated oven at 200℃, bake for about 12 minutes. Enjoy while hot.
