    Directions

    Step 1

    将处理好的鸡腿肉丁抹乾水分,加入醃料,醃至少30分钟,备用(图1);Pat dry the diced chicken thighs and marinate them with the marinade ingredients for at least 30 minutes. Set aside.

    Step 2

    热锅下冷油,下姜蓉、蒜瓣和辣椒乾煸香后,加入作法1的鸡肉丁,翻炒至断生(图2&3);Heat some oil in a pan, add minced ginger, garlic, and dried chili peppers. Stirfry until fragrant, then add the marinated chicken and stirfry until partially cooked.

    Step 3

    加入黑木耳、油浸五香咸鱼和调味料,翻炒均匀后,加入纯淨水,盖上盖子中火焖煮2分钟(图4&5);Add black fungus, oilsoaked salted fish, and seasoning ingredients. Stirfry until well combined, then add water, cover with a lid, and simmer over medium heat for 2 minutes.

    Step 4

    加入葱段和洋葱,开大火炒匀后,即可上锅,趁热配以饭/面享用(图6)。Add chopped green onions and diced onions. Stirfry over high heat until everything is evenly cooked. Serve hot with rice or noodles.
