    苦瓜的维生素C含量很高,具有预防坏血病、保护细胞膜、防止动脉粥样硬化、提高机体应激能力、保护心脏等作用。

    Step 1

    苦瓜切半挖出种子,再切成约3寸长条状,加入一汤匙盐捞匀置放15分钟,再以清水冲洗干净后放入沸水中汆烫备用。Remove seed of bitter melon and cut into 3 inches long, marinate with 1 tsp salt for 15 minutes, wash and blanch in boiling water.

    Step 2

    鸡腿斩件后加入1汤匙盐及2汤匙生粉抓洗1-2分钟,然后清水冲洗干净备用。Chop chicken leg into bite pieces and then marinate with 1 tbsp salt and 2 tbsp flour, wash and set aside.

    Step 3

    梅香咸鱼肉切片煎香待用。Slice salted fish and sear until fragrant.

    Step 4

    烧热2汤匙油爆姜片、蒜头及豆酱。Heat 2 tbsp oil in wok, saute ginger, garlic and bean paste till fragrant.

    Step 5

    放入鸡块拌炒并加入调味料炒匀。Add in chicken and seasoning, stir fry well.

    Step 6

    加入苦瓜翻炒及加入1碗水焖煮至滚。Add in bitter melon and 1 bowl of water, simmer and bring to a boil.

    Step 7

    最后加入煎香梅香咸鱼肉和红辣椒炒香,倒入粟粉水勾芡,即可盛碟。Lastly add in Mui Hiong salted fish and red chilli, fry well, thicken with some corn starch, serve.
