    Step 1

    以盐腌鸡,大火蒸至熟,然后取出滴干,待冷却后收入冰箱30分钟。Lightly season chicken with salt. Steam over high heat until chicken is cooked through. Remove and drain chicken well. Leave to cool completely then chill in the refrigerator for 30 minutes.

    Step 2

    在镬中烧热油和麻油,把虾米爆香,然后加入辣椒粉,继续以小火爆至香味溢出才盛出材料,加入调味料迅速混合。Heat cooking oil and sesame oil and saute dried prawns until fragrant. Add chilli flakes and continue to fry over low heat until fragrant. Dish out and mix in seasoning immediately.

    Step 3

    把鸡斩件,然后淋上四川辣料即刻享用。Chop chicken into serving pieces and place on a serving plate. Add prepared Szechuan chilli mixture over and serve immediately.
