    什么是Farro?Farro是意大利的词,意大利人会使用Farro制作沙拉、汤品等各种菜肴。它包括了三种古老的小麦种类的统称 :斯佩耳特小麦(Spelt)、二粒小麦(Emmer)及单粒小麦(Einkorn),富含高蛋白、高纤、低胆固醇等营养特性。

    Step 1

    先将烤箱预热至230℃。Preheat oven to 230℃.

    把Farro放入锅里煮沸,煮开后转小火,盖上锅盖慢火焖30分钟直到变软,之后沥干水。Bring water and farro to a boil in a saucepan. Reduce heat to low, cover and simmer until just tender, about 30 minutes. Drain if necessary.

    Step 3

    在焖煮Farro的同时,将茄子、红甜椒、西葫芦、洋葱和番茄放入大碗中,加入些许油拌均,再加入½茶匙盐和½茶匙胡椒搅拌,放入烤盘上烤25分钟,中途搅拌一次,直到蔬菜变熟并开始转成褐色。完成后放入大碗,并加入刺山柑,醋和蜂蜜继续搅拌。Meanwhile, toss eggplant, bell pepper, squash, onion and tomatoes with oil, ½ tsp salt and ¼ tsp pepper in a large bowl. Divide between the prepared baking sheets. Roast on the upper and lower racks, stirring once halfway, until the vegetables are tender and starting to brown, about 25 minutes. Return them to the bowl. Stir in capers, vinegar and honey.

    Step 4

Roast on the lower rack until just cooked through, 6 to 12 minutes, depending on thickness. Serve the salmon with the farro, vegetable caponata and lemon wedges.
