    南瓜營養價值高。含有豐富β胡蘿蔔素、維生素 C、維生素E、鋅,能清除體內自由基,對於糖尿病患者也是相當優良的好食物,而且熱量低又富含許多維生素及礦物質。

    Step 1

    预热烤炉至200℃。Preheat oven to 200℃.

    Step 2

    南瓜去皮去籽,切3公分小块,抹干。Peel pumpkin and remove all seeds and pulp. Cut into 3cm wedges and pat dry.

    Step 3

    菜花切小朵,抹干。Cut cauliflower into large florets and pat dry.

    Step 4

    在2个烤盘铺铝箔,放上南瓜和菜花,不要摆得太挤,滴油后以手搅拌,然后逐盘烤30分钟至周围的菜转黄。从烤炉取出。Line 2 large baking trays with foil. Place pumpkin and cauliflower onto trays in 2 divided portions. Do not overcrowd the vegetables. Drizzle oil all over and toss with hands. Roast one tray at time for 30 minutes per tray or until vegetables are browned around the edges and tender. Remove from oven and set aside.

    Step 5

    酱汁:把所有酱汁材料装罐混合摇晃均匀,调至自己适合的口味。Prepare Dressing: Combine all ingredients in a jam jar. Shake well to combine. Adjust taste if needed.

    Step 6

    吃前把烤南瓜和菜花摆碟,撒上椰丝,干果及香料,再淋上酱汁即可。To serve, arrange cauliflower and pumpkin on a large platter. Sprinkle with coconut, nuts and herbs. Drizzle with dressing.
