烧肉炒酸菜Stir-fried Roasted Pork and Pickled Vegetables

踏入不惑之年,有日听朋友们说起未来,他们异口同声说着同一个理想,“等到了退休年龄,就去某乡区开民宿,没事养花逗猫狗,有体力再种点瓜果蔬菜,如果可以钓钓鱼那就更好不过了……”随后而来的感叹和自嘲,仿佛这就是城市中年既平凡又遥远的梦想吧。我对农村生活并没有存在着特别兴趣,但也不抗拒,在儿子尚小的时候,为了让他体验农村生活,特地带他去文化乡下住几回,预约付款吃农家饭,睡农家床,喂农家蚊……不过说起吃农家饭,我是相当愉悦的。话说有次午饭吃到了阿姨做的咸菜炒花肉,咦,这不就是我小时候的味道吗?炒得油亮酸咸的拌着煮得有点硬的白饭,亲切感倍增、那感动马上就上头了。必需告诉我的朋友们,退休开民宿,可不能少了美味的农家菜啊!

    Directions

    Step 1

    酸菜洗净切细,烧肉切成细条,备用。Wash and finely chop the pickled vegetables, cut the roasted pork into thin strips, and set aside.

    Step 2

    干锅将酸菜炒至无水份,盛起备用。Dry fry the pickled vegetables in a pan until they are dry, then remove and set aside.

    Step 3

    猪油下锅,中火将烧肉煸炒,然后加入姜蒜,翻炒至香。Heat lard in a wok over medium heat, stir-fry the roasted pork until fragrant, then add ginger and garlic, and stir-fry until fragrant.

    Step 4

    加入作法1的酸菜和辣椒干,大火煸炒约2分钟后加入调味料,继续翻炒。Add the pickled vegetables and dried chilies from step 1, stir-fry over high heat for about 2 minutes, then add the seasonings and continue to stir-fry.

    Step 5

    加入葱花和辣椒,翻炒均匀,即可上桌,趁热配饭享用。Add spring onions and chili, stir-fry evenly, and serve hot with rice.
