    Step 1

    排骨斩件洗净,沥干水。Chop ribs into pieces and wash.

    Step 2

    将腌料全放入切好的排骨,腌制30分钟以上。Marinate ribs with marinades for at least 30 minutes.

    Step 3

    芋头去皮洗净,切条状。炸至金黄色,待用。Peel yam and cut into strips; and then deep fry until golden brown.

    Step 4

    将腌好的排骨,放入热油炸至金黄色,捞起待用。Deep fry marinated rubs until golden brown, drain.

    Step 5

    热锅下油,爆香虾米、姜片、葱白段、芋頭和排骨。Keep some oil in wok, saute dried shrimp, ginger, spring onion and soy bean paste until aromatic, and then toss in ribs.

    Step 6

    放入高汤,用中小火焖35分钟后加入调味料。Pour in broth, simmer in medium low heat for 35 minutes before add in seasoning.

    Step 7

    再焖25分钟或排骨变软即可,上桌前洒些葱花即可。Continue to braise for another 25 minutes or until meat is soften, dish out and sprinkle chopped spring onion on top to serve.
