田园猪扒 Country Style Pork Chop

材料 :夹心肉400克、大葱35克(切片)、青葱1条(切4公分长段)
腌料A :发粉1汤匙、味精1/2茶匙、白糖1茶匙
腌料B :
酱油1汤匙、白糖1汤匙、盐1茶匙、玫瑰露酒1/2茶匙、五香粉1/2茶匙、姜汁1茶匙、
胡椒粉1/4茶匙
酱汁 :
蚝油2汤匙、黑醋2汤匙、酱油1汤匙、白糖1 1/2 汤匙 、辣椒酱2汤匙、玫瑰露酒1汤匙、
味精少许、清水200毫升
勾芡 :生粉1汤匙和清水2汤匙(混合)
做法 :
1. 用松肉槌把肉敲松,然后放入盆内,加入腌过肉的清水,再加入腌料A浸泡30分钟,沥
干,再以腌料B腌数小时。
2. 把腌过的肉放入热油锅炸至金黄色。
3. 留少许炸油在锅内,把青葱和大葱爆香,然后加入肉扒和酱汁材料,加盖煮至汁稠后勾
芡。配番茄片和生菜吃。

 

Ingredients :
400g tenderloin pork, 35g onion (sliced), 1 spring onion (smashed and cut
into 4cm lengths)
Seasoning A :
1 tbsp baking powder, 1/2 tsp msg, 1 tsp sugar
Seasoning B :
1 tbsp light soy sauce, 1 tbsp sugar, 1 tsp salt, 1/2 tsp rose wine,
1/2 tsp five spice powder, 1 tsp ginger juice, 1/4 tsp pepper
Sauce :
2 tbsp oyster sauce, 2 tbsp Worchester sauce, 1 tbsp light soy sauce,
1 1/2 tbsp sugar, 2 tbsp chilli sauce, 1 tbsp rose wine, dash of msg, 200ml water
Thickening :
1 tbsp corn flour mixed with 2 tbsp water
Method :
1. Use a meat mallet to lightly hit on the meat slices. Put meat into a basin
and cover with enough water. Add seasoning A and soak for 30 minutes.
Drain and season with seasoning B for several hours.
2. Deep-fry the marinated chops until lightly golden.
3. Heat oil in a wok, fry spring onion and onion until fragrant. Add in chops
and sauce ingredients. Cover and cook until chops are coated with sauce.
Add thickening. Serve with tomato slices and lettuce.
