    做法简单易学的豆酱鱼料理,鱼肉鲜嫩入味可口又下饭。

    Step 1

    鱼破肚,洗净备用,用少许盐腌制5分钟让鱼身出(泄)水。To cut and wash the fish for later use, marinate it with a little salt for 5 minutes.

    Step 2

    用干净毛巾把鱼身抹干水分,沾少许干薯粉。Pat the fish with a clean towel and dip with some potato flour.

    Step 3

    热油锅,以小火把鱼煎香,捞起备用。Heat oil in a pan, fry the fish until fragrant over low heat, remove and set aside.

    Step 4

    锅底留少量油,小火爆香姜葱蒜,把鱼回锅,倒入淹没过鱼的清水(上汤最好)大火煮滚,倒入所有调味料,烧制7分钟即可熄火上桌。Leave some oil in the pot to sauté the ginger, onion and garlic on low heat, return the fish to the pot, pour in enough water to cover the fish (prefer use chicken stock), bring to a boil over high heat, pour in all the seasonings and cook for 7 minutes, done.
