    三精三肥的猪五花切成方方正正的小块,肥而不腻、酥而不烂、甜而不粘、浓而不咸的味道,好吃极了。

    Step 1

    将五花肉切成小块状。开水加入葱,姜,把五花肉入开水中焯烫2分钟,捞起备用。Cut pork belly in small pieces, blanch in boiling water together with spring onion, ginger for 2 minutes, drain.

    Step 2

    热油,爆香五花肉,加入姜片、葱白、八角、红辣椒,炒至至出油,变焦前先出锅。Heat oil in wok, sauté pork belly, add in ginger, spring onion, star anise and dried chilli till aromatic and golden brown, set aside.

    Step 3

    锅内加冰糖,翻炒至深褐色。Melt the rock sugar in wok until golden brown.

    Step 4

    冒白泡时倒入五花肉,加入1罐啤酒,小火慢炖30-40分钟,收汁,撒上青葱装饰,上菜。Add in pork belly when bubble up, toss in beer and cook with low heat for 30-40 minutes until sauce thicken. Garnish with some spring onion, done.
