    Step 1

    鱼用刀在两边背部轻轻划开,放入平底锅以少许油和盐煎片刻。 Cut 2 slits on both side of fish, sear in frying pan with low heat shortly

    Step 2

    将鱼轻翻至另一面,加入姜,蒜头和辣椒仔继续煎片刻。 Turn around the fish continue to sear, add in garlic and ginger

    Step 3

    然后转大火,注入绍兴酒和适量的水煮开,上盖以小火焖煮10分钟。 Turn to high heat, add in wine and some water. Once boiled, cover the lid and simmer in low heat for 10 minutes.

    Step 4

    加入老抽、醋、胡椒粉和盐调味,用勺子将汤汁淋至鱼身,加入薯粉去勾芡。 Add in the rest of seasoning, pour gravy all over the fish, and thicken with starch.

    Step 5

    最后将鱼捞起后加入葱和红辣椒,将汤汁淋上即可。 Dish out and garnish with red chilli and spring onion.
