英国有馅猪扒 English Stuffed Pork Chops

【材料】
连骨猪扒4份(切2公分厚片,每份240克)
【馅料】
烟肉40克(剁碎)、大葱1粒(剁碎)、蒜头2瓣(剁碎)、西芹40克(剁碎)、干迷迭香1⁄2 茶匙、干九层塔1⁄2 茶
匙,黑胡椒粉1⁄2 茶匙、青葱茸2汤匙、面包70克(切丁)、干覆盆子100克、鸡高汤1⁄2 杯、盐和现磨黑胡椒粉适量
竹签适量、额外5-6汤匙牛油(室温)、额外高汤6-8汤匙、鲜奶油1⁄2 杯
【做法】
1.在猪扒中间划开一袋口,然后以刀背敲松。(图1)
2.用平底锅炒烟肉,大葱及蒜头至烟肉变脆后,加入西芹,干香料,以盐和胡椒粉调味。(图2)
3.加入面包粒,干覆盆子及鸡高汤,然后拌入炒葱茸,炒均盛出。(图3)
4.以盐和胡椒粉腌猪扒,然后把炒料塞入切袋口,并以竹签封口。(图4-5)
5.把烤炉预热至180℃。
6.在烤盘涂油,然后加入高汤6-8汤匙,以牛油涂猪扒后放入烤炉烤30分钟。(图6-8)
7.取出烤盘,加入鲜奶油拌均即可配蔬菜和面包吃。

 

【Ingredients】
4 pcs (1-inch thick, each 240g, bone-in rib loin chops,split to bone), salt & pepper to taste
【Stuffing Ingredients】
40g bacon (chopped), 1 big onion(chopped), 2 cloves garlic(chopped), 40 g celery(minced), 1⁄2 tsp dried
rosemary , 1⁄2 tsp tsp dried basil leaves, 1⁄2 tsp black pepper, 2 Tbsps freshly chopped cilantro leaves, 70 g
bread(cubed),100 g dried cranberries, 1⁄2 cup chicken broth, salt and freshly ground black pepper to taste
Bamboo skewers
5-6 Tbsps extra butter(at room temperature)
6-8 Tbsps stock/ water, 1⁄2 – 3⁄4 cup cream
【Method】
1. Slice each pork loin in the centre to make a pocket. Pound with the back of the cleaver.(pic 1)
2. In a pan, begin to fry bacon. Add onion and garlic to pan and allow to saute with the crispy bacon. Add celery,
dried herbs and parsley. Season with salt and pepper. (pic 2)
3. Mix in bread cubes, dried cranberries and chicken stock. Stir in the cooked vegetable mixture. Mix well, remove
stuffing from heat.(pic 3)
4. Season the pork chops with salt and pepper. Stuff the chop with stuffing. Use bamboo skewers to help seal the
chops. (pic 4-5)
5. Preheat oven to 180℃.
6. Grease the pan with extra butter butter, add water 6-8 tbsps to the baking pan, the stuffed chops & bake
covered in foil for 30 minutes.(pic 6-8)
7. Remove the baking dish, stir in cream & serve immediately with steamed vegetables or fresh tomatoes, bread
on the sides.
