    Step 1

    将排骨、香菇、药材和粟子加入调味料拌匀,腌数小时后,分成8份。Season spareribs, herbs chestnuts and mushrooms with marinade for several hours. Divide filling into 8 por tions.

    Step 2

    起锅热油,把蒜茸爆香,然后加入糯米和眉豆,炒1-2分钟,然后移入大盆里,加入糯米调味料拌均。Heat oil in a wok and saute garlic until fragrant. Add glutinous rice and beans. Fry for 1-2 minutes. Dish out into a large basin. Add in rice seasoning to mix.

    Step 3

    把5汤匙炒香糯米装入一个小碗内,加入一份馅料,再盖上5汤匙的糯米,轻压至结实。Fill 5 tbsp heaped prepared glutinous rice in a bowl. Add one portion of filling and top up with 5 tbsp glutinous rice again. Press lightly to make it compact.

    Step 4

    在桌面铺一张荷叶,刷上少許生油,然后再放一片竹叶, 同样刷少许生油。Place a piece of lotus leaf on a table top and lightly brush with cornoil around. Place a piece of bamboo leaf over and lightly brush with corn oil.

    Step 5

    把糯米倒扣在荷叶上,然后包成包裹状,再以水草绑紧。重复动作至材料做完。Invert the bowl of rice ingredients in the centre. Wrap the lotus leaf neatly into a parcel. Tie up to secure the parcel with hempstring. Do the same for the rest of the dumplings.

    Step 6

    把粽子放入滚水中,水中加入1汤匙白糖和1汤匙盐,放入粽子后煮2 - 2½小时即可。Boil the dumplings in a pot of boiling water. Add 1tbsp sugar and 1 tbsp salt to the water. Cook or boil for 2- 2½ hours. Replenish with more hot water in the process of boiling.
