药材煎鸡扒 Herbal Chicken Chop

材料
全鸡腿 2 只(去骨)
生记药材帝皇鸡贵妃汤料 1小包
鸡旦 4 粒(打散)
面粉混合粘米粉 2 汤匙
调味料
盐 适量
胡椒粉 适量

做法
1 将鸡腿切成两片,加入2茶匙生记药材帝皇鸡贵妃汤料及调味料拌匀,腌置1小时。(图1-2)
2 旦液调入少许盐拌匀,取适量旦液淋入鸡腿内拌匀。(图3)
3 把鸡腿肉沾上干粉后,再裹上旦液。(图4-5)
4 平底锅加油烧热,放入鸡腿,以小火煎至两边呈金黄色及熟,沥油盛出。
5 用干锅小火炒香剩余的生记药材帝皇鸡贵妃汤料,撒在鸡肉上或当沾料,增加风味。(图6)

INGREDIENTS
2 chicken whole leg (debone), 1 sachet Sun Kee Emperor Chicken Imperial Soup Ingredients, 4
eggs (beaten), 2 tbsp mixture of plain flour & rice flour
SEASONING
Dash of salt and pepper

METHOD
1 Cut chicken whole legs into 2 pieces, marinate with 2 tsp Sun Kee Emperor Chicken Imperial
Soup ingredients and seasoning for 1 hour. (pic 1-2)
2 Season egg sauce with dash of salt and use some to mix with chicken whole legs. (pic 3)
3 Coat chicken whole legs with flour mixture and then dip into egg sauce. (pic 4-5)
4 Heat pan and sear chicken whole leg in low heat until both sides turns golden brown, drain.
5 Saute the remaining Sun Kee Emperor Chicken Imperial Soup ingredients in a dry wok under
low heat, sprinkle over fried chicken or as dilling when serve. (pic 6)
