    Step 1

    黑豆豉粒加入少许糖和油煮10分钟,使之香味溢出,取出稍压烂,加入蒜头碎、辣椒拌匀,备用。Cook fermented black soy bean with some sugar and oil for 10 minutes until flavor released; dish out and smash it; and then mixes with chopped garlic and red chili.

    Step 2

    排骨浸水½小时,清洗干净,沥干水份,加入调味料和黑豆豉料腌1小时备用。Soak ribs in water for ½ hour; wash and drain; and then marinate with seasoning and fermented black soy bean mixture for 1 hour.

    Step 3

    南瓜去皮切厚块,加入1汤匙干粟粉,捞匀。Peel pumpkin, cut into chunk pieces and then coat with corn flour.

    Step 4

    将排骨和腌料铺在南瓜面上,待蒸锅水滚后移入,用中火蒸30分钟便可。Place ribs and its condiments on top of pumpkin, steam in medium heat for 30 minutes, done.
