将山药刨丝。Grate the Chinese Yam into long strips.

炒锅以中火热油,打入2粒鸡蛋快炒成小块状的鸡蛋。Prepare a wok on medium heat, pour in the oil to heat up. Crack 2 eggs into the wok and stir it vigorously to create small pieces of scramble egg.

当鸡蛋炒成微黄时加入香菇,再炒多2-3分钟,最后加入山药丝和所有调味料,快手拌炒1-2分钟,注意不要让山药过熟。将炒好的馅料盛起,待凉备用。When the eggs all start to turn lightly browned, add in the shitake mushroom and cook for another 2-3 minutes. Then Chinese yam into the wok with all the seasonings. Quick stir for 1-2 minutes and don’t let the Chinese yam over cooked. Pour to a bowl to slightly cool down before wrapping.

取一张饺子皮放在掌心,勺入一小汤匙馅料在中间,对折成半月形,食指稍微将饺子皮往前推出褶折,拇指前端轻捏直到完成封口。Lay a piece of dumpling skin on your palm, put a spoon of filling on the middle of the wrapper. Fold to a half moon, and do a pinching action to let one of the side of the wrapper crinkle up.

放入竹蒸笼大火蒸4-5分钟。Put in a bamboo steamer to steam for 4-5 minutes.
蘸酱做法:将所有材料混合一起,配以饺子一同享用。For the dipping sauce: Just mix all ingredients together in a bowl and serve it with the dumplings.
