    Directions

    鲍汁是源于粤菜,现在已经在全国各菜系得到普遍应用的一种调味料。

    Step 1

    西兰花切小朵洗净,汆烫滚水片刻捞出,沥水,立刻放入冷水中冲洗,沥干后以调味料炒一下,然后排盘备用。Cut broccoli into florets, wash and blanch in boiling water briefly; rinse with cold water immediately; drain and stir-fry with seasoning A and dish out for platting.

    Step 2

    冬菇浸软去蒂,冬笋斜切成件,冬瓜斜切成件。Remove stems of Chines mushrooms, cut bamboo shoots and winter melon slantwise.

    Step 3

    起油镬2汤匙,下蒜粒、姜片爆香,加入冬菇、冬笋、冬瓜爆炒片刻。Heat 2 tablespoons of oil and sauté garlic, ginger until fragrant. Add in Chinese mushrooms, bamboo shoots and winter melon and stir-fry.

    Step 4

    加入调味料B煮滚后,调至中小火继续焖至熟透。Add in seasoning B and bring to boil, reduce to medium-low heat and continue to simmer until cooked through.

    Step 5

    以适量薯粉水勾芡,最后淋入绍兴酒及少许熟油后兜匀即可盛入茜兰花中。Stir in an appropriate amount of starch, and finally drizzle in Shaoxing wine and a little cooked oil, then mix well and pour on broccoli.
