    这道料理中的"鸡油菇",它是世界著名的四大名菇之一,具有清目,利肺,益肠胃等功效,含有丰富胡萝卜素、维生素C、蛋白质、钙、磷,铁等可促进增强人体免疫的物质。鸡油菇加上鲜虾和鸡蛋一起烹调,不止爽滑美味可口,当中的丰富营养都是小朋友在成长中所需的。

    Step 1

    鸡油菇洗净后用水泡发至软,去掉杂质和根部,抹干水份,备用。Wash and soak the Chanterelle until soften; remove stems, clean and pat dry.

    Step 2

    鲜虾去壳洗净、挑肠后,下腌料抓匀,放置一旁,备用。Devein prawn, wash and marinate with condiments; set aside.

    Step 3

    下1汤匙油,爆香蒜茸后下鲜虾炒至半熟,加入鸡油菇,继续翻炒至熟,盛盘,备用。Heat 1 tbsp oil in wok, saute garlic until fragrant; then toss in prawn until semi cooked; add in Chanterelle, continue stir-frying until cooked, dish out.

    Step 4

    鸡蛋打散,加入酱油拌匀,备用。Egg beaten and mix in soy sauce.

    Step 5

    使用原锅下1汤匙油,将鸡蛋炒至7分熟后,倒入的鲜虾鸡油菇,翻炒均匀后熄火上碟,撒上适量葱花,即可享用。Heat another tbsp of oil with the same wok, fry egg until 70% cooked, toss in Chanterelle and prawn, stir-fry until well mixed; dish out and garnish with spring onion. Done.
