    因把鱼身切斜片跟豆腐、红萝卜和香菇等食材互相交错叠放,而变成麒麟状,故称之。

    Step 1

    把所有酱汁材料放入锅里煮至滚。Pour all the sauce ingredients into a pot and bring to a quick simmer.

    Step 2

    将鱼头和鱼尾分置于椭圆形碟子的两端。Arrange the head and fish tail on the both ends of an oval plate.

    Step 3

    把鱼片排入,再以香菇片、红萝卜及豆腐间隔,组成2排。Place fish fillet and layer with mushroom, carrot and tofu. Repeat and form 2 rows.

    Step 4

    把鱼蒸8-9分钟至熟(视鱼肉厚度而定)。Steam fish for 8-9 minutes (depending on the thickness of the fillet).

    Step 5

    从锅取出蒸鱼,淋上酱汁及滚烫热油,再以青葱和红辣椒丝装饰即可。Remove fish and pour in sauce and hot oil. Then garnish with spring onion and chili, done.
