    Directions

    心得交流站 : 炸好的豆腐再回镬多炸一次,增加脆度。

    Step 1

    将辣椒沾酱拌匀备用。Mixes chilli sauce ingredients and set aside.

    Step 2

    水豆腐切小方块,排在碟上,洒上少许盐,盖上保鲜纸,放回冰箱,隔天用。Cut soft tofu into small cubes,arrange in plate,sprinkle salt on top,cover with cling and keep in fridge overnight.

    Step 3

    隔天豆腐取出,倒去多余水份,滾上脆皮粉,放置10分钟后,再滚上多一层脆皮粉,喷少许水再沾上芝麻。Remove tofu from fridge,pour away water,coat with crispy flour mixture; wait for 10 minutes,coat with another layer of crispy flour mixture; and then sprinkle some water in-order to coat with mixed sesame seeds.

    Step 4

    大火炸豆腐至金黄色即成,享用时配沾酱。Deep fry in high heat until golden brown; dish out and serve with chilli sauce.
