    提示:重复烤后,若月饼表面若出现裂缝,乃正常现象,冷却后天会自动缝合。刚烤好的月饼轿硬。2-3天后才吃最适当。

    Step 1

    把所有皮料混合搓成面团,若太黏可加粉。面团搓成后让它醒2-3小时,再分成45克/份。Combine all skin ingredients into a smooth dough. Should the dough be a bit sticky add the extra plain flour to mix. Leave dough aside for at least 2 – 3 hours. Weigh down he dough to 45g each.

    Step 2

    把瓜子和咖啡莲蓉混合,然后分成80克份,白莲蓉则是30克份,然后以咖啡莲蓉包扎白莲蓉。Mix melon seeds with coffee lotus seeds. Scale coffee lotus paste into 80g each. Scale white lotus paste to 30g. Wrap lotus paste with coffee paste.

    Step 3

    把混合面团杆平后,包入馅料,放入月饼模里,轻轻压平后扣出。Wrap filling with pastry skin then roll into a ball. Press into a mooncake mould. Tap lightly to dislodge mooncake.

    Step 4

    把月饼放入预热至160℃的烤炉里烤10-15分钟即可;待凉约10-15分钟,再放回烤炉里以150℃烤10分钟即可。Bake mooncake in a preheated oven at 160℃ for 10 minutes. Remove and cool for about 10 – 15 minutes. Return mooncake to the oven and bake at 150℃ for 10 minutes.
