    低筋面粉或包粉比较适合做饼皮。

    Step 1

    蛋液Glaze: 鸡蛋1小粒(打散加入¼茶匙清水和少许盐混合)1 small egg (beaten with ¼tsp water and a pinch of salt)

    Step 2

    馅料做法Method for the filling: 把莲蓉龙眼干肉混合,然后分成130克1粒,中间包入5克的鸡肉松,然后搓成圆形。Mix the lotus paste with diced dried longan then scale down the filling to 130g each piece. Wrap 5g chicken floss in the centre. Shape this filling into a round ball.

    Step 3

    月饼做法Method for mooncake: 1.把黄金糖浆和碱水及栗米油混合,1个小时后才加入面粉,搓成面团,然后以保鲜膜覆盖,让它醒2-3小时。Put golden syrup into a mixing bowl. Stir in alkaline water then add in corn oil to mix. Leave aside for 1 hour. Mix in flour and knead into a dough. Cover with a piece of cling film wrap and set aside for 2-3 hours to rest.

    Step 4

    2.把面团分成45克一粒,杆平后包入1份馅料。Scale down the dough to 45g each portion. Roll out the small portion and wrap a piece of filling.

    3.在月饼模撒面粉,敲掉多余的粉,然后放入包馅面团,压平后把月饼扣出,放在涂油烤盘里。Pat the mould with some flour then knock out the excessive flour. Put the dough into the mould and press it in. Knock the four sides of the mould to unmould the mooncake. Place it on a lightly greased tray.

    4.放入预热至180℃烤炉里烤10分钟,取出涂蛋液,再回烤炉继续烤多10分钟。Bake in preheated oven at 180℃ for 10 minutes. Remove mooncakes out of the oven and brush with glaze. Return the mooncakes to the oven and continue to bake at 180℃ for 10 minutes.
