鱼头豆腐汤是一道养生美食,由鱼头和豆腐为主要食材烧的汤,豆腐含钙量比较多,而鱼肉中含有维生素D,两者合吃,可以提高人体对钙的吸收。肥美新鲜的三文鱼头不但蛋白质丰富,更有着独特的奥美加鱼油味道让这道鱼头汤更加的有个性。

【小贴士】 姜片与洋葱爆香后起到了去腥提香的功用,咸菜和咸酸梅的酸味与乳酸菌,经过高温炖煮后散发出了氨基酸的鲜美味道。
把鱼头清洗干净,把鱼腮洗干净,用花雕酒腌制10分钟去腥。Rinse the fish head, place on a plate and toss with Huadiao Wine marinate for about 10 minutes to remove the fishy smell.
把锅洗干净,热锅冷油,放入姜、蒜、洋葱爆香。Heat wok with cold oil, add ginger, garlic and onion saute until fragrant.
再用大火把鱼头煎香,倒入盖过材料1.5倍的清水,放入咸菜。Fry the fish head over high heat until fragrant, pour in water to covered the ingredients, and add the salted vegetables.
大火煮滚,滤掉浮沫,放入豆腐、番茄片、萝卜片。盖上锅盖,大火烧开后转中小火慢炖20分钟。Bring to a boil over high heat, use a spoon to scoop the foam, add tofu, tomato and carrot. Cover the lid, turn to medium-low heat and simmer 20 minutes.
汤已经由清水变成了奶白色,并且有鲜美的鱼汤味飘出来,还有豆腐的香味,然后往汤里加入适量的盐调味,再加入适量的白胡椒粉去腥提香!Cook until the soup is rich in white, add some salt to taste and some white pepper powder to bring more aroma.
撒上一把鲜嫩碧绿的香菜或葱花,即可摆盘上桌享用。Sprinkle with a handful of coriander or chopped green onions and serve.
