乌达乌达(OTAK-OTAK)是一种以鱼肉泥与各种香料混合,放进香蕉叶或亚答叶包裹拿去炊蒸或烘烤的食品,在东南亚一带常见,也是马来西亚柔佛州麻坡的代表性美食。在北马槟城娘惹式的乌达,则被当地人称为“鲤鱼包”,而在登嘉楼一带,也有类似的食品,则称为Satar。

    Step 1

    取一小平底锅,将切碎的蒜米、葱头和指天椒炒1-2分钟,再加入黄姜粉和辣椒粉继续炒多1-2分钟,盛起待凉备用。In a small pan, saute the chopped garlic, onion and chili padi for 1-2 minutes. Add in turmeric powder and chili powder to cook for another 1-2 minutes only before the paste get burnt. Set aside to cool down.

    将鱼片切成小块,保留一半,将另一半剁成鱼浆。除了完整的山栳叶和香蕉叶,将剩余的全部材料搅拌均匀,腌制20-30分钟。Cut the fish fillet into cubes, keep half of it into a bowl, and chop the balance half to a fine paste. Pour in the paste, add all the remaining ingredients except the whole daun kaduk and banana leaf. Mix well and allow to marinate for 20-30 minutes.

    Step 3

    取一片香蕉叶,铺上一片山栳叶,舀放2汤匙鱼浆,然后包起来并用牙签固定。Take a banana leaf, lay with a piece daun kaduk, then scoop about 2 tablespoon of the fish mixture, then wrap it up and secure it with a toothpick.

    Step 4

    放入蒸锅蒸7-8分钟即可享用。Steam in a steamer for 7-8 minutes and its ready.
