余香素排Fragrant Gluten Steak

【材料】3人份
豆包6块、豆腐干2块、紫菜少许(剪碎)、素火腿30克(切碎)、芫荽少许(切碎)、三色杂豆100克、生菜适量、鲍鱼菇适量、小番茄适量

【调味料】
盐1/2小匙、薯粉2小匙、胡椒粉少许

【面糊】
面粉1 1/2汤匙、粟米粉1/2汤匙、水4汤匙、面包糠适量

【美乃滋酱】混合
美乃滋酱3汤匙、酸柑2小匙、幼糖1/2小匙

【做法】
1.煮热水把三色豆和鲍鱼菇烫熟,沥干水,待用。
2.把豆腐干压烂加入紫菜、素火腿、芫荽和调味料,搅拌均匀,再把它酿在豆包内,涂上面糊,再粘上面包糠。(图1-5)
3.烧热少许油,将豆包炸香即可盛起,沥油(图6)。
4.把素排放在碟上再排上三色豆、生菜、鲍鱼菇,淋上美乃滋酱和辣椒酱即可享用。

【Ingredients】3 Servings
6pcs gluten, 2pcs harden bean curd, some chopped seaweeds, 30g mock ham(chopped), some chopped coriander, mixed frozen vegetable, some lettuce, abalone mushroom and cherry tomato

【Seasoning】
1/2 tsp salt, 2 tsp tapioca flour, dash of pepper

【Batter】
1 1/2 tbsp plain flour, 1/2 tbsp corn flour, 4 tbsp water, some breadcrumb

【Mayonnaise Sauce】(Mixes all)
3 tbsp mayonnaise, 2 tsp lime juice, 1/2 tsp caster sugar

【Method】
1.Blanch frozen vegetable and abalone until cooked, drain and set aside.
2.Mash harden bean curd and then mixes with mock ham, coriander and seasoning, mix well and then stuff into gluten and coat with batter and then breadcumb.(Pic 1-5)
3.Heat some oil in wok, fry gluten until golden brown and dish out.(Pic 6)
4.Place fried gluten steak on plate and garnish with frozen vegetables, lettuce and abalone mushroom, serve with mayonnaise sauce and chili sauce.
