素菜的特征主要有:时鲜为主,清爽素净;花色繁多,制作考究;富含营养,健身疗疾。
把素鱼切斜刀,不要切断,放进热油炸香。Cut mock fish into slantwise slices but keep intact; and then deep fry in hot oil until fragrant.
烧热油锅加姜末和冬菇,素火腿先炒香,加入调味料后煮滚,加入红、青甜椒煮至汁浓稠,淋上素鱼即可。Heat oil in wok, saute ginger, mushrooms and mock ham until fragrant, add in seasoning and bring to boil,then add in red and green capsicum and cook until the gravy is thicken, pour over mock fish and serve.
