    心得交流站 : 冬菇要炖至软滑,吃起来才有海参口感。

    Step 1

    将冬菇浸发,揸去水份,拌入1茶匙糖和1 ½茶匙生粉,腌30分钟,每朵冬菇卷起,用粗线扎紧。Soak Chinese mushroom,squeeze out water and marinate with 1 tsp sugar and 1 ½tsp corn flour for 30 minutes,then roll each up and tighten with hemps-string.

    Step 2

    煮滚调味料加入扎好的冬菇隔水炖2小时即成海参冬菇。Bring seasoning ingredients to boil,add in mushrooms and double boil for 2 hours.

    Step 3

    茄子去皮切成带子状大小,隔水蒸8分钟排上碟,海参冬菇拆线排上碟再放上芦荀,煮滚炖过冬菇剩下的汁勾芡淋上即成。Cut eggplant into blocks and steam for 8 minutes,arrange in plate,remove the strings of mushroom place on plate and top with asparagus,thicken the sauce of mushroom and pour over the dish to serve.
