冰皮材料
糯米粉80克、粘米粉80克、澄粉140克、糖粉80克、煉奶100克、牛奶280克、粟米油80克

色素
蓝色:蓝花3朵 (用热水浸泡至水转为蓝色)
蓝色:紅麴粉¼茶匙
青色:抹茶粉¼茶匙

馅料
友爱绿茶莲蓉馅500克

做法
1 冰皮做法:把所有粉料及糖粉过筛入大盆内,混合成为粗粒状,分成4分。
2 其中1份加入冷水,拌匀成面糊备用。


3 其余3份分别加入不同色素及冷水,同样拌匀成面糊。
4 将筛过的面糊放入蒸炉里蒸20分钟至熟。


5 馅料做法:将所有友爱绿茶莲蓉馅分成每份50克。


6 組合:将蒸好的冰皮面团分成每份50克等分,包入一份馅料。
7 在月饼面撒上少许粉,压入饼模具里,然后轻扣出来。

8 收入冰箱冷吃。

CRYSTAL SKIN INGREDIENT
80g glutinous rice flour (sifted), 80g rice flour, 140g wheat flour, 80g icing sugar, 100g condensed milk, 280g milk, 80g corn oil

COLORING
Blue color: 3 blue pea flowers (soak in hot water until the water turns dark blue)
Red color: ¼ tsp red Yeast Powder
Green Color: ¼ tsp green tea powder

FLINING
500g YU-AI green tea lotus paste

METHOD
1 To make crystal skin: Sift all the flour and icing sugar ingredients into a mixing bowl, mix until mixture resembles breadcrumbs, divide in 4 portions. (pic 1-2)
2 Mix 1 portions with cold water gradually to become batter.
3 Mix another 3 portions with different food colouring & cold water gradually to become batter. (pic 3)
4 Steam the batter into steamer for 20 minutes till cooked.(pic 4-5)
5 To prepare filling: Scale YU-AI green tea lotus paste  at 50g each, set aside.
6 To assemble: Scale crystal skin into 50g portions. Wrap skin over the filling. (pic 6-8)
7 Dust some flour on the mould;  place the mooncake inside. Press out. (pic 9-10)
8 Best to keep refrigerated before serving.
