    心得交流站 : 芋头不要炸至金黄色,卖相不美。

    Step 1

    芋头条炸熟备用。Deep fry the yam strip and keep for later use.

    Step 2

    烧热油,爆香材料B,加入清水及炸芋条焖至入味收汁,起镬备用。Sauté ingredients B until fragrant, add in water and fried yam, simmer until flavor infused, dish out.

    Step 3

    香港奶白飞水,过冷河备用。Blanched Nai Yau Bak and rinse in cold water.

    Step 4

    烧热油2大匙,爆香姜茸,加入剩余材料A炒匀, 最后拌入焖芋头和调味料,勾芡上碟即成。Heat up 2tbsp oil in wok, sauté chopped ginger until fragrant, toss in all remaining ingredients A, yam and seasoning, thicken with starch and dish out.
