印度烤鸡汉堡包 Tandoori Chicken Burger

【印度烤鸡材料】可做8个
鸡全腿4只(约1.5公斤,去骨去皮)
【研磨腌料】
蒜头6瓣、嫩姜6公分、辣椒粉4茶匙、印度混合香料4茶匙、
小茴香1茶匙、盐2茶匙、白糖1茶匙、优葛4汤匙、食油3汤
匙、红色素适量(随意)
【配料】
黑炭汉堡包8个、薄荷酱(食谱请参考第20页)、腌渍大葱、生菜、黄瓜片各适量
【腌渍大葱】
大葱1粒,切丝后以2-3汤匙白醋和糖腌制至少1小时。
【印度烤鸡做法】
1. 在鸡肉上面划数刀,每只切成两块。
2. 以腌料腌鸡肉,用保鲜膜覆盖,收入冰箱腌隔夜。(图1-3)
3. 热油,将鸡肉煎至熟透。(图4-5)
【组合】
将黑炭汉堡面包横切开,涂牛油。把黄瓜片、印度烤鸡及腌
渍大葱顺序放在面包上,淋上薄荷酱,盖上面包即可享用。(图6-8)

【Tandoori Chicken Ingredients】for 8 portions
4 chicken whole legs (abt 1.5kg, deboned, skinned)
【Chicken Marinade】ground fine
6 cloves garlic, 6cm young ginger, 4 tsps chili powder,
4 tsps garam masala, 1 tsp ground cumin, 2 tsps salt ,
1 tsp sugar, 4 Tbsps yoghurt, 3 Tbsps cooking oil, red food
colouring [optional] 【Sub-Ingredients】
8 burger charcoal buns, mint sauce [refer to page 20 for
recipe], letuce, cucumber slices, pickled onions
【Pickled Onion】
1 big onion, sliced marinated with 2-3 Tbsps vinegar and
sugar to taste. Leave aside for at least 1 hour.
【Method for Tandoori Chicken】
1. Diagonally slit the surface of chicken whole legs, cut each
into halves, mix with marinade ingredients and keep in
the fridge overnight by covering with a cling film.(pic 1-3)
2. Preheat non-stick pan, add some oil & pan fry chicken
until thoroughly cooked. (pic4-5)
【To Assemble】
Split and butter the charcoal buns. Lay cucumber slices,
tandoori chicken, pickled onions on burger bun, pour mint
sauce over and cover with another half of bun, serve immediately.(
