双鲜小草 Stir-fried Twin Chili

材料
红辣椒150克、青辣椒150克、江鱼仔80克、鱿鱼丝80克、
姜片20克、蒜米20克、豆酱½汤匙
调味料
盐½茶匙,糖1茶匙,花雕酒½汤匙
做法
1 把辣椒切粒,过筛去籽,然后拉油备用。(图1)
2 接着把鱿鱼丝和江鱼仔炸脆备用。(图2-3)
3 爆香蒜米、豆酱和姜片,放入辣椒翻炒和调味。(图4-6)
4 加入江鱼仔炒匀上碟,最后放上鱿鱼丝即可。(图7)

INGREDIENTS
150g red chilli, 150g green chilli, 80g dried anchovy, 80g dried squid (juliennes), 20g ginger slices, 20g
chopped garlic, ½ tbsp soy bean paste
SEASONING
½ tsp salt, 1 tsp sugar, ½ tbsp Chinese cooking wine
METHOD
1 Cut both chilli into pieces, discard seeds and blanch in hot oil. (pic 1)
2 Use the same oil to deep fry dried squid and dried anchovy until crispy; set aside. (pic 2-3)
3 Keep some oil in wok, saute garlic, soy bean paste and ginger until fragrant; toss in chilli and seasoning. (pic 4-6)
4 Stir in fried anchovy, dish out and sprinkle fried dried squid on top to serve. (pic 7)
