    米及花生,加以糖、水、麥芽熬煮的技藝,呈現香脆不黏牙。

    Step 1

    先把配方的米香,油葱酥,芝麻粒,花生粒和白胡椒粉拌均匀,然好放入烤箱用150°C。保温备用。Mix the bubbled rice, fried shallot, sesame seeds, peanuts and white pepper powder, and then put them in the oven with 150°C. Keep it warm .

    Step 2

    把水麦芽,细沙糖,麦芽糖,盐和水,放入锅中,以用中火加热至140°C为糖浆。待温度到达即关火。Put sugar syrup, sugar, maltose, salt and water into the pot, and then heat with medium heat to cook into syrup.

    Step 3

    然后把保温的米香粒加入煮好的糖浆里。翻炒均匀成米香馅。Then add in warm rice mixture and stir to mix evenly.

    Step 4

    铁圈抹上油,米香馅填满铁圈然好压平后可立刻脱模。Grease the iron ring with oil, fill the ring with rice mixtures, and then flatten and dislodge immediately.
