    Step 1

    将苦瓜切片后,用冰水浸泡10分钟滤干。Sliced and soaked bitter gourd in ice water for 10 minutes, drain.

    Step 2

    烧滚半锅水,加入糖、油各1茶匙、盐½茶匙,放入苦瓜片汆烫过捞起备用。Boil half pot of water, add in 1 tsp each of sugar and oil, ½ tsp salt, then put in bitter gourd to blanch, dish out and drain.

    Step 3

    把茄子切小块,拉油备用。Cut eggplant into pieces, blanch in hot oil.

    Step 4

    爆香材料C,加入茄子及调味料煮至汁浓熄火,加入材料B炒匀上碟,趁热享用。Saute ingredients C in wok until fragrant, add in eggplant, bitter gourd and seasoning, stir-fry until gravy thicken, off heat, toss in ingredients B and dish out.
