【材料】
石斑肉150克、大虾3只(去壳)、鲜带子4粒、马蹄4粒、蘑菇4粒、西芹30克、红萝卜100克(川烫)、小玉米4条(以上全部切粒)、嫩姜茸1汤匙、麻油1汤匙、食油1茶匙、花雕酒1汤匙

【腌料】
盐1茶匙、白糖1/4茶匙、胡椒粉1/8茶匙、生粉1茶匙、鸡高汤150毫升

【做法】
1.把海鲜料和调味料混合拌均后置放一旁30分钟。
2.热麻油和食油,把姜茸炒香后加入腌海鲜,煮2-3分钟,然后加入西芹、马蹄、红萝卜、小玉米及调味料炒均。
3.赞入花雕酒和额外少许麻油,盛出趁热吃。

【Ingredients】
150g garouper fillet, 3 large prawns(shelled), 4 fresh scallops, 4 waterchestnuts, 4 button mushroom, 30g celery, 100g carrot(blanched), 4 baby sweet corns (diced all), 1tbsp young ginger (minched), 1tbsp sesame oil, 1tsp oil, 1tsbp Shao Hsing wine.

【Condiments】
1tsp salt, 1/4tsp msg, 1tsp cornflour, 1tsp egg white

【Seasoning】
1tbsp oyster sauce, 1/4tsp sugar, 1/8tsp pepper, 1tsp cornflour, 125ml chicken stock

【Method】
1.Combine fish, prawns and scallops with candiments and leave aside for 30 minutes.
2.Heat oil and sesame oil in a wok, fry minched ginger for a while. Add marinated seafood ingredients and cook for 2-3 minutes. Add celery, carrot, water chestnuts and baby sweet corn to mix and stir in seasoning.
3.Splash in Shao Hsing wine and add a little more sesame oil. Dish out and serve immediately.
