    广东人过年一定少不了发菜和蚝豉, 因为它们不仅营养美味,而且“发菜”谐音“发财”;“蚝豉”谐音“好市”或“好事”。

    Step 1

    蚝豉必须泡水数小时至软,滴干。Soak dried oysters for several hours until soft. Rinse and set aside.

    Step 2

    起锅热油和麻油,把姜和蒜加入炒至香;然后加入蚝豉和香菇,炒5-6分钟,加入酱汁材料和倒入盖过材料的清水,煮至滚后转小火焖煮30分钟。Heat sesame oil and fry garlic and ginger until fragrant.Add dried oysters and mushrooms to fry for 5-6 minutes.Add sauce ingredients and pour in water to cover the ingredients.Bring to a boil.Reduce the heat and braise for 30 minutes.

    Step 3

    加入发菜、红萝卜及适量白酒,煮至汁稠。Add Fatt Choy,carrot and wine. Cook until gravy is reduced.

    Step 4

    小白菜切半,以加盐和糖的滚水川烫至熟,滴干取出然后排碟即可。Cut baby bak choy into halves. Blanch in boiling water with a pinch of salt and sugar added. Dish out and garnish.
