    Step 1

    把蛋打散,加入调味料搅拌均匀。Break eggs into a bowl and add in seasonings,mix lightly with a fork.

    Step 2

    用不黏锅热麻油,把姜丝炒香。Heat sesame oil in a nonstick frying pan and fry ginger till aromatic and golden.

    Step 3

    加入当归,快炒后加入鸡蛋液,炒散后加入枸杞。Add tong kwai; fry briskly. Stir in eggs sauce. Scramble eggs then add in kei chi.

    Step 4

    继续炒均后加入青葱粒,并撒入额外黑胡椒粉,盛出。Toss and fry briefly. Add spring onion to mix and sprinkle over with an extra dash of ground black pepper. Dish out and serve at once.
