    Directions

    在北马槟城娘惹式的“Otak-otak”,被稱為“鯉魚包。Otak-otak是用火炭烤熟的,北马的鲤鱼包则是用蒸的。

    Step 1

    把香蕉叶烫软,剪成20x20cm约8片待用。Blanch banana leaves until soften; cut into 8 sheets of 20 X 20cm.

    Step 2

    将鸡蛋敲入大碗里,加入盐、糖和胡椒粉打散,加入粘米粉、疯柑叶丝、假佬叶丝和香料拌匀。Beat eggs in mixing bowl with salt, sugar and pepper, add in rice flour, juliennes kaffir lime leaves and Betel leaves; mixes with pounded spices.

    Step 3

    摊开1片香蕉叶,铺入2片假佬叶,放入适量鱼肉片,舀入4大匙做法2,折好用牙签固定,依法把材料做完。Top 2 sprigs of Betel leaves on 1 banana leaf, arrange fish strips and 4 tbsp egg mixtures on top of it, fold up and secure with tooth pith, repeat steps to finish all ingredints.

    Step 4

    将包好的鲤鱼包放在蒸盘里,放入煮滚水的蒸笼里大火蒸15-20分钟即可。Place the wrap Otak-otak in steamer, steam in high heat for 15-20 minutes, done.
