学做3种不同口味泡菜

泡菜古称葅,是指为了利于长时间存放而经过发酵的蔬菜。一般来说,只要是纤维丰富的蔬菜或水果,都可以被制成泡菜;像是卷心菜、大白菜、红萝卜、白萝卜、大蒜、青葱、小黄瓜、洋葱、高丽菜等。蔬菜在经过腌渍及调味之后,有种特殊的风味,很多人会当作是一种常见的配菜食用。所以现代人在食材取得无虞的生活环境中,还是会制做泡菜。

青瓜糖醋泡菜

Sweet & Sour Cucumber Kimchi

【材料】
日本青瓜400克、子姜50克、红辣椒3只、盐2小匙、话梅肉5粒
【腌料】
有机糖3大匙、白米醋3大匙

【Ingredients】
400g Japanese cucumber, 50g young ginger, 3 stalk red chili, 2 tsp salt, 5 pitted plum
【Condiments】
3 tbsp organic sugar, 3 tbsp white vinegar

【做法】
1.日本青瓜洗净切片;红辣椒切圈;子姜切片,全部加入盐拌匀腌至软,然后,用水冲洗后,捞起沥干水份。(图1-2)

Wash cucumber, slices; cut red chili in round shape, ginger cut into slices and marinate all with salt until soften, then wash and drain. (pic 1-2)
3.将腌料煮至溶解,放凉待用。(图3)

Boil the condiments ingredients till sugar dissolved, cool down. (pic 3)
4.把所有材料放入大盆中,加入腌料捞匀,移入空瓶内,盖好放入冰箱,冷藏1⁄2天才享用。(图4)

Place all ingredients in mixing bowl, add in condiments, mixes well and transfer to 1 big jar, cover with cap and store in fridge for half a day before serving. (pic 4)

黄梨泡菜 Pineapple Kimchi

【材料】
黄梨500克、包菜200克、红萝卜50克、青瓜50克、指天椒少许、盐2小匙

【Ingredients】
500g pineapple, 200g cabbage, 50g carrot, 50g cucumber, some chili padi, 2 tsp salt

【腌料】
有机糖2大匙、柠檬汁2粒、生抽1汤匙、炒香芝麻1汤匙

【Condiments】
2 tbsp organic sugar, 2 lemon, 1 tbsp soy sauce, 1 tbsp toasted sesame seeds

【做法】
1. 将黄梨去皮切小块。

Skinned pineapple and cut into small pieces.

2. 把包菜、红萝卜、青瓜切小块加入盐拌匀腌1⁄2小时,然后冲洗干净,沥干水份。

Cut cabbage, carrot and cucumber into small pieces, marinate with salt for 1⁄2 hour, then wash and squeeze out accessive water.
3. 把所有材料放入大盆中,加入腌料拌匀后移入大空瓶内,盖紧放入冰箱冷藏2-3小时才享用。(图1-5)

Place all ingredients in mixing bowl, add in condiments, mixes well and transfer to 1 big jar, cover with cap and store in fridge for 2-3 hours before serving.(pic 1-5)

西芹泡菜 Celery Kimchi

【材料】
西芹250克、红辣椒1只、大黄椒50克

【Ingredients】
250g celery, 1 red chili, 50g yellow capsicum

【调味料】(全部拌匀)
有机盐1⁄2小匙、酸柑汁2汤匙、生抽1汤匙、有机糖1小匙、麻油1小匙

【Seasoning】
1⁄2 tsp organic salt, 2 tbsp lime juice, 1 tbsp soy sauce, 1 tsp organic sugar, 1 tsp sesame oil

【做法】
1.将西芹洗净,撕去老筋切成小片。大黄椒及红辣椒均切小块。(图1)
2.将半锅水煮至沸后放入西芹,焯至滚捞出沥干水。(图2)
3.把全部材料放在大盆中拌匀,加入混合味料即可享用或冷食。(图3-5)

【Method】
1.Wash celery, peel off string and cut into small pieces, cut yellow capsicum and red chili into small pieces.(pic 1)
2.Boil water in pot and blanch celery briefly, drain.(pic 2)
3.Combine all 3 ingredients in a mixing bowl, mix well with seasoning, serve immediately or after chilling. (pic 3-5)
