    地中海饮食型态可降低血管疾病的发生率,同时有效降低轻度认知功能障碍的发生,降低转变为失智症的风险。多蔬果,豆类及全谷类,摄取含有较高比例单元不饱和脂肪酸的油脂,肉类以鱼类为主。此道料理从洋葱,大蒜,番茄到海鲜类,都是对预防失智症有帮助的食材,是一道营养丰富的汤品。

    Step 1

    热镬中火炒洋葱与大蒜至变软(勿焦)。加入茴香头继续炒数分钟至软。加入红辣椒粉、番茄和海盐,中火继续拌炒10分钟。Heat oil in a saucepan, saute onion and garlic with medium heat until soft but not brown. Add in fennel and cook a few minutes until softened. Stir in chile flakes, tomatoes and salt, cover and cook on medium heat about 10 minutes.

    Step 2

    加入白酒与2½杯水搅拌均匀煮滚,加入马铃薯,再煮6分钟左右直到马铃薯变软。加入盐和胡椒调味后试味,最后加入柠檬汁。Stir in wine and 2½ cups water, bring to a boil, add potatoes and cook for another 6 minutes until potatoes are tender. Add salt and pepper to taste. Lastly toss in lemon juice.

    Step 3

    用盐与胡椒稍微腌制鱼块,将它们放入炖菜中,盖好,转小火煨煮约5分钟或鱼肉变熟。Season fish pieces with salt and pepper, add into the stew vege and covered, simmer for 5 minutes or until fish is just cooked through.

    Step 4

    鱼汤煮好后,将其取出放入汤碗中,加入罗勒叶搅拌即可享用。Arrange fish into bowl, add in basil leave,serve hot.
