杏仁坚果脆饼 Florentine

【材料】
蜜糖20克、葡萄糖20克、牛油40克、白糖60克、鲜奶油100克、 橙皮茸40克、剁碎糖衣红樱桃40克、杏仁片100克、低筋面粉20克
【做法】
1. 把蜜糖、葡萄糖、牛油、白糖及鲜奶油煮至115℃,熄火。(图1-2)
2. 加入橙皮茸、糖衣干果,杏仁片及面粉,搅拌均匀。(图3-6)
3. 倒入硅胶模里,然后放入烤炉以 170℃ 烤至金
黄色。(图7)
4. 待完全冷却后收入密封瓶子里,随时取用。

【Ingredients】
20g honey, 20g glucose, 40g butter, 60g sugar, 100g cream, 40g orange zest, 40g glazed red cherries (chopped), 100g almond flake, 20g cake
flour
【Method】
1.Boil honey, glucose, butter, sugar and cream to 115℃, turn off heat.(pic 1-2)
2.Add in candied orange peel, candied mixed fruits, almond flakes and cake flour to mix.(pic 3-6)
3.Put into silicon mould. Bake at 170℃ till golden brown.(pic 7)
4.Cool completely before storage in air tight container.
