    芋头是营养价值很高的食材,对身体有很好的药用价值。芋头中含有一种天然的多糖类高分子植物胶体,有很好的止泻作用,并能增强人体的免疫功能。

    Step 1

    鱼洗干净,起刀开双飞,让鱼身坐立起来,造型特出,飞腾状,如鱼跃龙门。Wash the fish and butterflied it with the knife, let the fish sit up, the shape is outstanding, flying like a dragon.

    倒入料酒和少量鱼露腌制5-10分钟,芋头切块备用。Marinate the fish with some cooking wine and fish sauce for 5-10 minutes. Cut the yam into pieces for later use.

    锅内放油,油热时倒入鱼慢火煎香捞起备用,接着把芋头也倒入油中炸金黄香酥,捞起备用。Heat oil in pot, deep fried the fish till golden and crispy, drain and set aside. Then use the same oil, deep fry the yam till golden fragrant crispy.

    Step 4

    锅内留少量油热锅,下姜片,蒜和葱爆香,芋头入锅,倒入一热开水熬,熬到汤水浓白,芋头粉粉的,再倒入鱼摆好盖上锅盖一起炖,大火五分钟,入葱段和小辣椒片,小火再焗五分钟,调味即可。 Leave a small amount of oil in the pot, saute the ginger, garlic and green onions until fragrant, add in the yam and hot water, boil until the soup is thick and whit. Add in fish and cover the pot, simmer with high heat for 5 minutes. Add the onion and chili flakes, bake for another five minutes on low heat. Season to taste, done.
