    Directions

    Step 1

    鸡肉腌料:将香茅、小葱头、大蒜、黄姜粉、香菜粉、咖喱粉、盐和油混合成细糊状。倒在鸡块上,加入糖搅拌均匀,可腌制过夜或至少3小时。To prepare the chicken marination: Blend lemongrass, shallot, garlic, turmeric powder, coriander powder, curry powder, salt, and oil to become a fine paste. Pour over the chicken cube, add sugar and mix well. Set aside to marinate overnight or at least 3 hours.

    Step 2

    根据自己的喜好大小,用竹签串起鸡肉,每支2-3块鸡肉,直到将所有鸡肉串好备用。Use a bamboo skewer to poke 2 to 3 pieces of chicken depends the size you want. Get all the chicken skewered and grilled later.

    沙爹酱做法:将干辣椒、大蒜、小葱头、香茅、南姜、黄姜粉和油搅拌成细糊状。将糊倒入锅中炒香,加入水、马六甲椰糖、盐和亚叁汁。酱汁煮沸后加入花生碎,转小火煮10-15分钟。如果酱汁太浓,可以加点水。For the satay sauce: Blend dried chili, garlic, shallot, lemongrass, galangal, turmeric powder and oil to a fine paste. Pour the paste into a pot and saute the paste will fragrant, add in water, gula melaka, salt and tamarind juice. Once the sauce boiling add in crushed peanut and boil over low heat for 10-15minutes. If the sauce too thick, you may add some water.

    Step 4

    准备一个烤盘,将沙爹放在上面,以中火将烤至颜色均匀并完全煮熟。沙爹沾花生酱和佐料例如黄瓜和洋葱片一同享用。Prepare a grill pan on medium heat, place the satay on and grill till colour evenly brown and fully cooked. Serve with peanut sauce and condiment such as cucumber and onion slices.
