    Step 1

    把椰浆和高汤倒入深锅煮至滾。In a deep heavy-based pot combine coconut milk and chicken stock. Bring to the boil.

    Step 2

    加入香茅、蓝姜及魚露。Add lemon grass, galangal and fish sauce.

    Step 3

    加入研磨红咖哩料,小火焖煮1-2分钟,然后加入疯柑叶、亚参汁及辣椒。Add red curry paste and simmer for 1-2 minutes. Add kaffir lime leaves tamarind juice and chillies.

    Step 4

    加入烧鸭肉,焖煮10分钟,然后加入蒜菜煮約1分钟,加入黄糖调味。Add roast duck pieces and braise for 10 minutes. Add watercress and cook for a minute. Add palm sugar to taste.
