    Step 1

    用滚水川烫鸡肉,滴干。Blanch chicken in a pot of boiling water. Drain and put aside.

    Step 2

    玉竹、党参及洋参须冲洗干净后泡水20分钟,然后以1公升清水煮30分钟至出味。Rinse yuk chuk,tong sum and yong sum soe. Soak in filtered water for 20 minutes. Put herbs with 1 litre water into a saucepot and boil for 30 minutes until the stock is flavourful.

    Step 3

    把鸡肉放入炖盅,滤入药材汤,隔水炖30分钟,然后加入红枣、龙眼干、海底椰、苹果及枸杞,再炖25分钟,调味即可。Place chicken into a double-boiler pot. Strain herbal stock into the pot. Double-boil for 30 minutes. Add in red dates,dried longan,sea coconut,apple and kei chi. Continue to double-boil for 25 minutes more. Adjust with seasoning to taste.
