马草鸡从小吃一种清凉解渴的马草,鸡肉也带有浓浓的马草味,为了保有鸡肉的马草香味,马草鸡只吃少许玉米。而且喝的是山中泉水,不注射长肉剂,饲养时间至少要三个月,是有机马草鸡。马草鸡拿来清蒸,最能保有原汁原味的鸡肉香。

    Step 1

    鸡洗净抹干,鸡腹内外均匀地抹上当归粉、花椒粒和粗盐,腌制隔夜备用。Wash the chicken and wipe dry. Spread the Dang Gui powder, peppercorns and hard salt evenly on the whole chicken, marinate overnight for later use.

    Step 2

    把青葱、姜块塞入鸡腹中,并将酒均匀地涂抹鸡腹内外,中途需翻转鸡身一边涂抹得更均匀,置放10分钟。Stuff the scallion and ginger into cavity of chicken, spread the wine on the inside and outside of the chicken evenly. Leave it for 10 minutes.

    Step 3

    蒸锅里的水沸腾后,放入鸡盖上锅盖蒸15分钟。熄火后盖着焗10分钟。After the water is boiling, put the chicken into the steamer, cover the lid and steam for 15 minutes. Turn off the heat, don't open the lid and keep for another 10 minutes.

    Step 4

    取出鸡搽上麻油,斩件上碟。Take out chicken, rub with some sesame oil, cut pieces and served.
