    Step 1

    鸡胸肉去皮,抹干后用刀横切成薄片,然后在切面抹上腌料,置放一旁。Remove skin of chicken breast, pat dry then cut horizontally through into a thin flat piece. Sprinkle over the cut-out meat with marinade evenly and leave aside.

    Step 2

    用叉把芝士奶油压松,把菠菜切小块后混入,并撒入少许黑胡椒粉。Put cream cheese into a bowl and press out evenly with fork. Cut the spinach into fine pieces and mix with the cream cheese. Sprinkle in a dash of ground black pepper to mix.

    Step 3

    把菠菜芝士奶油铺在鸡胸肉片上,然后卷起,确保奶油混合料全封住。Spoon 1 heaped tablespoon of mixed cream cheese and spinach mixture onto a piece of chicken breast meat, roll up and wrap neatly. Make sure the cream cheese mixture is properly sealed.

    Step 4

    以2条火腿条把鸡肉卷围绕,完全覆盖,并以牙签插在两端,加以固定。Use 2 strips of bacon wrap round the chicken until it is completely covered and secure with a toothpick on both ends.

    Step 5

    把火腿包鸡卷放在烤盘里,然后放入预热至180℃的烤炉里烤15分钟或至金黄色即可,中途翻转。Place the chicken balantine pieces on a baking tray;grill in a preheated oven at 180℃ for 15 minutes or until golden brown. Halfway through flip over to grill the other side. Remove once it is done.

    Step 6

    把沾酱材料混合,用以沾鸡肉卷吃。Combine all dipping sauce ingredients, stir well to mix;use it to serve chicken balantine.
